Gluten Free Cornbread

This gluten free cornbread recipe is sure to be a winner with your family and friends! It  goes wonderfully with casseroles, green salads and it would do good to make an appearance at chili cook offs too. Most people won’t even know it is gluten free unless you tell them.

Gluten Free Cornbread Recipe

Ingredients

  • 3/4 cup gluten free flour
  • 1 cup cornmeal
  • 1/2 cup sugar
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 tsp. xanthan gum
  • 2 eggs
  • 1 cup milk or Almond milk
  • 4 tbsp. honey

Instructions

Preheat oven to 400. Lightly grease an 8x8 square pan.

In a bowl place the dry ingredients and stir with a fork until blended, set aside.

In a stand mixer bowl, place the wet ingredients. Mix on low for 30 seconds until eggs are mixed well. With mixer on low slowly add the dry ingredients until all is combined with the wet ingredients.

Evenly spread mix into the 8x8 prepared pan. Place in your preheated oven and bake for 18-22 minutes. It’s done when the top of the gluten free cornbread is golden brown and a toothpick inserted in the center comes out clean.
