Kid’s Favorite Pasta Salad

Around our house, springtime is the time for refreshing, light foods that the kids find as delicious as I do!  I’m always on the search for those easy, practical chilled dishes that are as good when they are first stirred up as they are the next day packed into a healthy lunch!  This quick pasta salad, a favorite of my kids, is one of those great finds!

Here are the simple ingredients to make it for your own family:

Kid’s Favorite Pasta Salad

Ingredients

  • 2 cups cooked whole wheat pasta
  • 1 small apple, cored and chopped
  • 1/2 of a cucumber, seeded and chopped
  • 1/4 cup chopped pecans
  • 1/4 cup regular or golden raisins
  • 2 Tbs. olive oil
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper
  • Juice of 1 lemon
  • 1 Tbs. chopped fresh parsley (optional)

Instructions

In a large bowl, combine pasta, apple, cucumber, pecans, raisins, olive oil, salt, and pepper. Squeeze on lemon juice. Cover and let pasta salad chill until serving time. Stir in parsley, if desired. Makes 6 cups.
